Step 1 – Dough Mixing
The production process begins with the preparation of dough. Flour and other required raw ingredients are mixed with the precise amount of water using Penguin’s Heavy-Duty Dough Mixer.
The mixer produces a smooth, uniform, and highly elastic dough suitable for Panipuri production. Once the dough is prepared, it is allowed to rest for approximately 10 minutes. This resting period improves gluten development, enhances elasticity, and ensures better puffing during frying.
Step 2 – Automatic Sheeting & Cutting
After the resting process, the dough is transferred to the Penguin Panipuri Sheeting & Cutting Machine.
The machine converts the dough into a perfectly uniform sheet with consistent thickness before accurately cutting it into Panipuri discs.

The operator simply feeds the dough into the machine, while Penguin’s advanced Three Roller Technology automatically performs:

Step 3 – Automatic Gaddi (Stacking) System
Once the Panipuri discs are cut, they are automatically transferred to the Penguin Automatic Gaddi & Stacking Machine.
The machine neatly stacks the Panipuri discs into perfectly aligned bundles without any manual handling. This increases production speed while maintaining hygiene and consistency throughout the process.
Step 4 – Intelligent Fermentation Chamber
Proper fermentation is one of the most critical stages in producing premium-quality Panipuri.
After stacking, the Panipuri discs are transferred into the Penguin Fermentation Chamber, where they remain for approximately three hours.
